I made these recently and they are delicious! Not nearly as healthy as the picture in the recipe looks, but tasty nonetheless. :)
- 2 cups rice cereal
- 2 cups oats
- 1/2 cup raisins or other dried fruit (I used chocolate chips)
- 1/2 cup brown sugar, firmly packed
- 1/2 cup light corn syrup
- 1/2 cup peanut butter
- 1 tsp. vanilla
- cooking spray
In a large bowl, combine cereal, oats and raisins or chocolate chips*. In a small saucepan, mix brown sugar and corn syrup. Heat and stir until boiling. Remove from heat. Stir in vanilla and peanut butter. Pour over cereal mixture and mix well. Press firmly into a 9x13 inch baking pan that has been sprayed with cooknig spray. Cool and cut into 16 bars. Store in an air tight container.
*Note- If you want the chocolate chips melty and swirled into the bars, mix them in with the cereal then add the sauce. If you want the chocolate chips whole and chocolate chip like, add them after you mix the cereal and sauce.
